A Typical Lunch: Quick & Healthy

I have had my fair share of sweets this week, between the pumpkin peanut butter cups and yesterday’s cinnamon pear crisp. And don’t get me wrong – I love dessert – but even I’m feeling a little sugared out. This, combined with an unusually busy work week, has left me craving simple, whole foods.

I generally don’t have much time during the week to prepare lunch, so in addition to eating a lot of leftovers, I’ll often use an avocado as the base for my meal. It’s loaded with healthy fats, tastes amazing on its own, and keeps me full for hours.

My favorite way to eat it is all mashed up with a sprinkle of sea salt and pepper, and then spread on top of one or two pieces of toast.  Served along with some slightly sweet grape tomatoes, this lunch is simple and healthy, but tastes indulgent thanks to the creamy avocado.
