A Typical Lunch: Quick & Healthy

I have had my fair share of sweets this week, between the pumpkin peanut butter cups and yesterday’s cinnamon pear crisp. And don’t get me wrong – I love dessert – but even I’m feeling a little sugared out. This, combined with an unusually busy work week, has left me craving simple, whole foods.

I generally don’t have much time during the week to prepare lunch, so in addition to eating a lot of leftovers, I’ll often use an avocado as the base for my meal. It’s loaded with healthy fats, tastes amazing on its own, and keeps me full for hours.

My favorite way to eat it is all mashed up with a sprinkle of sea salt and pepper, and then spread on top of one or two pieces of toast.  Served along with some slightly sweet grape tomatoes, this lunch is simple and healthy, but tastes indulgent thanks to the creamy avocado.

    I’ve been eating grape tomatoes like nobody’s business this week. I’m addicted!
    This meal is sooo similar to what my lunches look like, almost on a daily basis. Simple, quick, and you can never go wrong when avocado is involved. (:

      Agreed! The grape tomatoes are almost as good as the heirloom ones I’ve been getting from my farmer’s market. So sad tomato season is pretty much over (at least around Boston). But I suppose now we have pumpkin and winter squashes. 🙂

    What a great way to enjoy avocado! Most times it’s so creamy and good that you don’t need anything but salt and pepper..you’re right on!

    What kind of bread is your favorite? Have you ever had blue cheese black pepper bread? It’d be great with this!

      I’ve never had that blue cheese bread, but it sounds awesome! I used regular French bread for this, but my favorite bread is actually a roasted tomato fougasse from a bakery down the street. Amazing!

  4. I’ve been eating avocado this week like it’s my job. I don’t know why, but when I actually buy some from the grocery store, I just can’t keep my paws off!
