Vegan Mint Chocolate Milkshake

Confession: up until a week ago, I had never even heard of a Shamrock Shake. It’s like the hasselback potato trend. Only recently did I learn about that one, too. And yes – it’s now on my food blogger must-try list. You know, the list that includes things like banana soft serve, cookie butter, and chia seeds. Check, check, and check!

I take pride in the fact that I don’t follow McDonald’s menus, although I do love mint. And milkshakes. But the scary ingredient list, 540 calories, and 16 grams of fat in a small (thanks, Wikipedia)? I’ll pass. I realize the original shamrock shake doesn’t include chocolate, but I’m on day 8 without it. Therefore, my version has cocoa powder. Think of it as a mix between a Shamrock Shake and a Wendy’s Frosty.

I made this milkshake a few nights ago, when Aaron was at a business dinner and the thought of more chia pudding for dessert made me gag. Let me tell you —a milkshake never tasted so good. I wasn’t sure if it was all of the vegetables talking or if this simple, no sugar shake really was that awesome, so I made another one the following night for Aaron to sample. And fortunately, he confirmed that my taste buds have not been hijacked. This really is good.

Wendy’s Frosty meets McDonald’s Shamrock Shake, minus the dairy, sugar, and scary ingredient lists.
Ingredients
  • 1 C. Unsweetened Non-Dairy Milk (I used soy milk)
  • 1 Frozen Banana
  • 2 Tbs. Cocoa Powder
  • 1/4 Tsp. Mint Extract
  • 1/2 Tsp. Pure Vanilla
  • 5-6 Ice Cubes
  • Sweetener to Taste (I used 4 drops of NuNaturals Liquid Stevia)
Instructions
  1. Place all ingredients, except sweetener, in the blender and blend until smooth.
  2. Sweeten according to taste.
Notes
Don’t worry about tasting the banana in this. The mint does a very good job of masking the taste, and the frozen banana adds a great creamy texture.
Feel free to omit the cocoa powder if you’re not in a chocolate kind of mood. I, personally, can’t relate to not wanting chocolate.
