Thanksgiving is just one week away! Can you believe it? Normally I spend Thanksgiving with my big extended family at a restaurant in New Hampshire. Sometimes Aaron joins me, other times he spends the day with his family at his parents’ house an hour outside of Boston. This year, however, is extra special because we’re both going to be spending the holiday with his family…for the first time ever! How we went ten years of dating and six years of marriage without having Thanksgiving together with his family is beyond me, but better late than never, right? His mom loves to cook so I’ll be taking it easy this year and bringing a veggie-packed side dish as my contribution, which is fine by me because a) I could use a little kitchen break and b) everyone knows that the sides are the best part!
Below are a few of my favorite vegan Thanksgiving side dishes that are simple and satisfying. Think: minimal prep time, not too many ingredients, and as little dish-washing as possible.
