Before I gush about this caramel popcorn, I need to tell you how much your comments and congratulations on my SEO for Food Bloggers eBook meant to me. I’ve found that there’s this weird sort of lull in between the hustle of creating something and launching it, where a lot of questions and self-doubt can creep in: What am I doing? Was this really a good idea to put myself out there? Will anyone except my parents buy it? If you’ve ever created a product, you almost certainly know what I’m talking about. All of your support and enthusiasm has really helped me to keep those not-so-nice inner voices at bay, because truly, I am so proud of this eBook and being able to translate my 8+ years of SEO work into the type of guide I wish someone had written for me years ago when I was going through a big old SEO and blogging learning curve.
Okay, so this popcorn. Where to start? It’s crunchy-chewy, sweet-salty, 5 ingredients, and takes less than 20 minutes from start to finish (including making the 3-ingredient vegan caramel sauce!). It’s also impossible to stop eating and better than any caramel popcorn I’ve had in the past, vegan or not. Did I mention it’s low-glycemic, too? Coconut nectar, baby. That stuff is made for caramel.
If you can convince yourself it’s worth sharing, this salted caramel popcorn would make a seriously swoon-worthy holiday gift for someone extra special…or someone who questions whether vegan treats can be awesome. This is the snack to quiet any naysayers—their mouths will literally be too full of caramel popcorn to do anything other than mumble, “OMG. This is soooooo goooood.”

If you’re short on time, feel free to buy pre-popped popcorn. I’ve made this recipe with plain popcorn and lightly salted popcorn and both times it was fabulous.
It takes some self-discipline not to eat all of the caramel popcorn before baking it, but try to hold off. The baked popcorn is a dreamy combination of crunchy and chewy—well-worth the 10 minute wait.
